Small lot wines
FROM BUD-BREAK TO CONSUMER:
It all begins in January of each year with controlled pruning to avoid over cropping of the vines.
In April (Bud-break) new growth ensues, and meticulous organic cultivation continues until the grapes start turning color in early August.
At harvest in October the clusters are handpicked and groomed to insure that only sound grapes berries make their way to the winery.
At the winery the grapes are foot trodden and hand destemmed for a pure berry autochthonous (natural) fermentation.
When fermentation is complete the wines settle and remain “Sur lie” (over the lees) for ten months before going to barrel.
After barrel the wines return to stainless steel tanks for an additional twelve months of natural gravity fining before bottling.
Bottled wines remain cellared for a minimum of twenty-four months to complete a five-years evolutional journey before made available for enjoyment.
