Small lot wines

 

FROM BUD-BREAK TO CONSUMER:

  • It all begins in January of each year with controlled pruning to avoid over cropping of the vines.

  • In April (Bud-break) new growth ensues, and meticulous organic cultivation continues until the grapes start turning color in early August.

  • At harvest in October the clusters are handpicked and groomed to insure that only sound grapes berries make their way to the winery.

  • At the winery the grapes are foot trodden and hand destemmed for a pure berry autochthonous (natural) fermentation.

  • When fermentation is complete the wines settle and remain “Sur lie” (over the lees) for ten months before going to barrel.

  • After barrel the wines return to stainless steel tanks for an additional twelve months of natural gravity fining before bottling.

  • Bottled wines remain cellared for a minimum of twenty-four months to complete a five-years evolutional journey before made available for enjoyment.
